These abstract nutritional categories also cut across the distinctions among types of foods 64 and food groups, such as between plant and animal foods, and between whole and highly processed foods, in the sense that all of these foods are encountered as just different combinations of nutrients. While this more abstract nutrient level of engagement with food gives us new insights into food composition and quality, at the same time it potentially conceals other (more concrete) perspectives or levels of understanding and engaging with food.

These experts can be distinguished from the scientists and dieticians in the direct employ of food companies, 55 the promoters of popular weight-loss diet books, and other parties that either lack the requisite qualifications or have direct financial interests in promoting food products or dietary supplements. While nutritionism has been the dominant paradigm framing expert research and dietary discourses since the nineteenth century, nutrition experts do not equally adopt or embrace all aspects of this paradigm.

They have also directed the nutritional gaze at—and increasingly within—the body, which is encountered and measured in terms of a number of internal and external biomarkers, such as blood cholesterol levels, blood pressure, blood sugar, insulin, and body mass index (BMI).
